apple cake - very simple and classical


This recipe for a sponge cake with apples, there are well diversified in many variations. I particularly like about this version, that the dough, three tablespoons of ground almonds are added, the dough can not be dry and taste, it is also a benefit.
instead of the recommended Cox Orange apples I used Pink Lady, and this variety seems to be well suited for baking.

150 grams of soft butter 150 grams sugar

1 pack. Vanilla sugar
1 untreated lemon, rind and juice, salt

3 eggs 180 grams
flour 1 teaspoon baking powder

3 Tbsp.
ground almonds 600 grams of apples (Idared, russet) (Dolce: Pink Lady)
4 Tbsp. Apricot jam (Dolce: quince jelly)

creamy butter and then stir in sugar, vanilla sugar, lemon peel and stir for a further 2 pinches of salt. Nachund add the eggs and mix in flour, baking powder and almonds. Peel apples, cut in half and cut on the round side several times lightly. Pour batter into a buttered mold and
fill the apples with the round side up on top. Bake in preheated oven at 160 degrees about 40 minutes. After that brush with the warmed jam or jelly.
